I needed to make these Oatmeal cookies today. It has been a long time and it was requested loudly when the first request came from across the room.

 

Just wish I felt better. Oh well…. they have their hearts set on these. I’ll toughen up and make them smile.

 

 

Thank Goodness for my Kitchen Aid mixer….I doubled the recipe which I do NOT recommend. Just make two batches and that way you won’t need to wipe the dough off the walls. (stop laughing)

 

Very simple recipe right off the top of the  Quaker Oats Oatmeal container   

 

Here you go…

 

Oatmeal cookies

1/2 cup ( 1 stick) plus 6 tbsp. butter softened

3/4 cup firmly packed brown sugar

1/2 cup granulated sugar

2 eggs

1 teaspoon vanilla

1- 1/2  cups all purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt (optional)

1 cup raisins

3 cups Quaker Oats (quick or old fashioned uncooked oats)

 

Heat oven to 350 degrees. In a large bowl beat butter and sugars on med speed of electric mixer until creamy.

Add eggs and vanilla and beat well

Add combined flour, baking soda, cinnamon and salt and mix well

Add oats and raisins  and mix well

Drop dough by rounded tablespoons onto  ungreased cookie sheets.

Bake 8-10 minutes or until light and golden brown. Cool 1 minute on the cookies sheets. Remove to wire rack. Cool completely. Store tightly covered.

Makes about 4 dozen cookies.

 

There you go….. easy peasy.

 

for higher altitude increase flour to 1-3/4 cup

 

Bar cookies

bake 30 to 35 minutes in ungreased  13×9 metal baking pan

There you go….. easy peasy also.
