Crockpot Chicken Cacciatore

 

I Broil the chicken ahead of time so that the skin is nice and browned before putting it in the crock-pot.

You can make this in a dutch oven too. oh geeze or any larger pan on the stove. I told you that I don’t take things so serious that I can not adapt.

 

 

Crockpot Chicken Cacciatore

 

2 small or 1 large onion, thinly sliced

3  lbs chicken, cut up (or your favorite parts)

1  (6-ounce) can tomato paste

1  (14.5 ounce) can diced tomatoes or tomato sauce. ( I use mixture of both at times and and other times I use just one of them)

6-8 ounces mushrooms, sliced (fresh) or cheat and use a can but different taste and texture

1   teaspoon salt

3-4 cloves garlic, minced (5 if real small)

1- 1/2 teaspoon dried oregano

2 whole bay leaves

1/4 cup water (more or less depending on the weather, and the products)

 

I broil the chicken first ( or bake). NOT completely cooked, just browned.

Place onions in bottom of crock pot. Add chicken pieces on top.

Stir together remaining ingredients.

Pour over chicken.

Cook on low 6 to 8 hours if chicken was broiled or baked first if not cook for about 9 hours ; high 3 to 4 hours.

Serve over angel hair pasta. ( or rice ) Oh heck or serve with a baked potato on the side. I don’t take things that serious. :)

I usually serve with a tossed salad and homemade garlic bread.
