The weather is going to be very warm for five days. He stated that he has a “great idea” (this can’t be good). This is how the conversation went.
Him….. I have a great idea.
Me……. (gasp) what is your idea honey?
Him….. I am going to be home on a mini vacation and it is going to be super hot. Why don’t you make all your good salads and i will BBQ for all five days?
Me……Do you mean to tell me that you will eat cold salads every “dinner”?
Him….Yep, and there won’t be any pots and pans and you can have a mini vacation too.
Me…..Ok but if I give up my plans today to make all those salads, YOU WILL eat them everyday. And you Will BBQ because a promise is a promise. NO excuses !
Him…. Oh, you don’t have to worry about that honey, I really like those salads. And its been a while since I cooked outside.
Now Ladies and Gents, you know this isn’t going to end well. First of all it will take me five days to wash all the big huge pans, platters, etc from making the salads.
He decided on “Chicken Parts” (his name).
I went to the freezer and got the pieces out.
( I freeze individual because everyone likes different pieces and sometimes we are missing a person or so for dinner).
So I went and got he pieces
I put them on the platter, and seasoned both sides.
I found all the bbq tools for him.
I made up the bbq sauce and put it in an easy to hold cup,covered in foil so the bugs don’t fly in etc.
I told him where the place them, told him not to move them ( teart he skin)
I told him when to turn them
I told him how to adjust the heat ( up or down)
I told him when to put the sauce on
I told him when to move some piece to the top shelf
I told him when to put sauce on the other side
I told him when to turn the flame down.
I told him when to take them off.
NOT MAKING DINNER takes a lot of you. I might have to make dinner tomorrow. *smile*

I will post the complete recipe with measurments at the bottom of this post. My Mom taught us these recipes since we were young. ( Not the Taco Salad, that was my Aunt’s recipe and I adjusted.)

Potato Salad
These were HUGE potatoes. I only used four and they barely fit in the dutch oven pan.

YES, I know I am using the RED cutting board normally used for MEAT ( green for veggies), But as much as I am cooking in the last three days…. I grab what is in the dishwasher clean.

There’s nothing like a cold Tuna Noodle Salad ( requested for all BBQ’s).

Taco Salad
Because this was a last minute idea… I didn’t have time to take a lot of pictures.
Below is browning the ground chuck or sirloin with a little onion for flavor
add chopped onion, chopped green pepper, dark red kidney beans, catalina dressing, Taco flavored Doritos , Nacho cheese Doritos

One whole bag of Doritos Taco Flavored Crushed.
You should have seen my husband’s face at this step of the recipe. When buying snacks or munchies, he takes his time to make sure that the bag seem full and not crushed. ( you know where i’m going here don’t you?).
I asked him to walk into the pantry and get me the bags of Doritos for this recipe. I took the Taco Flavored ones and without opening, I started crushing. His mouth dropped open and he made this awful noise. ( laugh )
I used all the Kraft Three Cheese, and a handful of the Kraft Mexican. Yummy !!

This is a 24 ounce bottle of Kraft Catalina. I normally wouldn’t use this size but I used 2 pounds of ground beef. I had about 3 ounces left but it would have been too much to use.
These are the Nacho Doritos. I used maybe a 1/2 of a 11.5 ounce bag.
this is the finished salad. It turned out so good.
