When I bought the corned beef, I bought two flat and one point.

I am going to cook it all in the roaster since I am cooking three along with the potatoes, carrots and cabbage. That way I will be able to spend time with the family.

The carrots and potatoes are sicking in water waiting for the final trimming before putting them in the roaster.

I gave them the Final trim and cuts …… time to go swimming.

Okay, freaking out… this roaster is not even reaching 300 degrees. The water is barely warm after almost 6 hours. Darn it, this thing isn’t even a year old. I am so tired of buying roasters. Maybe I need to blog about that.
I have purchased 4 of the same brand giving them chances for different models. NOPE…. didn’t help.

I put all the corned beef along with veggies in a very large roasting pan and put it in the regular oven.

It is cooking much better, but I am mad about yet ANOTHER roaster.

Here is the Colcannon that was demanded requested. They always tell me that they will NOT eat unless I make it. They are so cute, how could I possibly say no? Besides, after all these years, they know that it is part of the meal.

Now to finish added the ingredients and stir. Now its time for dinner if the corned beef is ready.

Okay, it is time to eat, grab your plates!!

YUMMY !!!

Rolls, Cole slaw, Colcannon, steamed broccoli are on the table, help yourself.
Dessert is cupcakes with green sprinkles, jello, pudding or left over chocolate cake.
