Rotel Chicken

This was dinner tonight served along with a cold crispy salad.

 

ROTEL CHICKEN

 

1 whole fryer, boiled and de-boned, and cut in bite size pieces

1 cup chicken stock or broth

1 small/med onion, chopped

1 can cream of chicken soup (undiluted)

1 can cream of mushroom soup (undiluted)

1 can Rotel Diced Tomatoes and Green Chiles

2 cups shredded cheddar, colby or Jack cheese

1 bag Nacho Cheese Doritos, crushed (reserving about 1/3)

 

Preheat oven to 350 degrees.

In a LARGE bowl, combine cooked chicken, chicken stock, both undiluted soups, Rotel, shredded cheese, and 2/3 of the bag of crushed Doritos (reserving about a 1/3 the chips for later).

Pour mixture in ungreased 13×9 casserole.

Bake, covered 30-35 minutes or til bubbly.

Remove foil, spread reserved crushed Doritos on top, return to the oven and cook an additional 3-5 minutes or til topping is golden brown. Be careful not to overcook the chip topping.
