Recipe to try…… Peach State Grilled Salad

I have collected recipes for about 40+ years. I also have well meaning friends and relatives that send me recipes. I have collected them online since 1994 or 1995 and have recipes from family and friends from the 1950’s. If I don’t start posting them and throwing away the papers, I will be buried in boxes LOL.

 

Grilled Peach Salad

Ingredients

1 Large Vidalia onion, cut into thick slices
1 Tbs olive oil
2 large peaches, pitted and cut into halves
12 oz mixed greens
1/4 lb thick cut bacon, cooked and crumbled into chunks.
1/4 tsp salt
1/2 cup vinaigrette or any other salad dressing you feel would go with this.
4 oz feta, chunked mozzarella or goat cheese

Instructions

1.-Heat your grill and grill basket or grill pan if using
2.-Brush the onion slices with about half of the oil. Place them on the grill or grill basket if using one. -Cook these turning occasionally but be careful so they stay together. Cook until tender (10-15 mins). When they are done break them into rings and set them aside.
3.Brush the peach halves with the remaining olive oil and sprinkle with a tiny bit of salt. Place them on the grill or in the grill basket. Cook until caramelized and tender. When they are done, cut each of the halves into 3 or 4 pieces.
4.- Place the salad greens into a bowl. Top them with the onion, bacon, peach slices and goat cheese.
5.Drizzle the dressing over and toss. Eat !
6.Serves about 4
