Rambling like Always, and Last Night’s Dinner of Steak Thingies”.

Where should I start? How about right here with some pretty photos of the sunrise?  I agree…. here they come.

 

I feel so privileged to be able to see the sunrises and sunsets. What a way to start the day.

It is such a pretty morning, all the birds are singing, and the sunrise is so pretty. I didn’t think that it would be a nice day  because it was so cloudy. It turned out to be a very nice start to the day. I will show you the pictures of the sunrise as soon as I find the cord to the camera. You’re laughing at me aren’t you? I heard you. (Update… look above I found it )

 

Dinner last night was “different”. It was like a steak fajita but different. Boy that made sense huh? I will also post those photos. I couldn’t get the step by step and the after photos were not great. They filled the plates and were gone LOL. I managed to get a couple photos that looked like food. That’s OK, I don’t think that you come here for my “gourmet cooking” LOL. Good thing, you’d be pretty disappointed. LOL.

 

This meal is one that can be made in the morning and finished before dinner. ( but don’t leave it out that long without refrigerating. Yes, I had to say that in case there are people just learning to cook. ( Oh good grief, I hope you don’t go away with my bad habits. But I’ll help if I can… I promise)

 

I’ll tell you how those steak thingies.

I used a wonderful cast iron skillet. It was a good choice too.  If  you use one too, make sure it is nice and hot. Mine are all seasoned so extra oil etc isn’t really necessary. But that doesn’t mean that there aren’t times I grab the oil or butter. ( sidetracked again) But if you don’t have one, please use either your outside grill. inside grill or your oven broiler.

I cooked four large sliced sirloin 2 or 3 at a time. I seared them until brown Do NOT COOK PAST MED RARE !!!. They will cook more later before serving.

They look strange and I’m not happy it. I should have taken more pictures but I didn’t. Oh well, they were rare and seared to a perfect color of doneness. (yes, I know that isn’t the right word LOL….I’ll stop)

Santa please bring me a camera, I’ll TRY to be good!

 

 

Take them out of the pan and put them on a plate (above). Continue until you have enough to feed the family.

Now add thinly sliced onions to the hot pan and about one tablespoon of butter. Don’t burn the butter please. stir fast just long enough that they are no longer “raw”. I hope you are scrapping all the bits from the bottom of the pan. That is the yummy stuff.

Now turn the burner off and add 2 tablespoons of water, or wine, or broth, or stock etc. I use water because I wanted the flavor of onions to be prevalent. ( oh brother)

 

 

At this point I sliced tomatoes, grated cheddar cheese, sliced raw red onion, and shredded lettuce for the sandwiches. These were supposed to be served with salsa. Well , that is what was suggested, but you know me…. I’m a rebel, and made my own sauce. Recipe to follow.

 

Now slice the steak really thin and across grain and place it into a pile on a plate. Yes, it is pretty rare, your not done cooking it yet. Let it sit in the juices on the plate, you will add juice and all to the pan when ready.

Now on the stove you have the onions sitting in the pan, and the meat is sliced up.  What you’re supposed to serve as a sauce was not appealing to me so as a rebel….. I changed it. What you’re supposed to serve is…….”Store Bought Salsa”.  Yep, that’s what it called for, but I say…… nope !

This is what I used. It is a single recipe… I DOUBLED THIS. I think you should too.

It was very good even though it doesn’t look like much. I will be so happy when Santa brings me another camera. This one is on his last legs and changes its own settings. Oops, back to the recipe.

Take 2 med or one real large tomato and dice it. Not tiny, just dice it. Now dice a jalapeno pepper after removing the seeds and veins. Or if you only have jarred or canned… good enough. Maybe a tablespoon of either of those. Now add it to the maters.

 

Now look to see what kind of onions you have. Yellow? White? Red? Good, now cut one of them. LOL. Dice it just like the maters.

 

Now add an envelope of McCormick salsa mix. I know, I know, it only calls for 2 med tomatoes, why am I adding other things. I have said it a million times…. I’m a rebel !  I have NEVER been able to follow one single recipe unless it was perfect or from my family. There are even times I change them anyway. See, side tracked again, back to the sauce..

 

Now take a ripe avacado and dice it. Yes, same size as the maters and onions *smile*. Now throw it into the bowl with the other stuff and mix.  Cut a lime in half and squeeze it in the bowl.  Place a piece of plastic wrap on the bowl and put it in the fridge until dinner. This is what is going on the sandwiches and also on the side to scoop up some tortilla chips. *crunch crunch*. Please tell me that you are going to double this recipe… it would be good on anything or just to scoop.

When it is time for dinner, turn the burner back on. The onions will start to cook and at that point, slide the meat and all the juice into the pan. It will only be a few second and all the red meat is now cooked and still tender. Sprinkle taco seasoning ( I make my own so I will say add about 2-3 tablespoons). Yes, I will write the taco seasoning too. I  make most of my spice blends.

Turn the burner off.

Lay your  Large tortillas out and sprinkle the cheese in a line where you will be loading these babies up. I don’t use the little ones because you only get one teaspoon of items.

Now add, the sauce on that line, then the shredded lettuce, then the the mater, then onion, then steak.

At this point I added a tablespoon of sour cream.    ( rebel….. *snicker*)

 

Now roll this up like a burrito or fajita. and serve with toritta chip and  my weird sauce.

There is only two left, you better hurry !!

 

 

I tried to peek inside but it didn’t work. You can’t see how big these things were. Oh well, I’m sure you get the idea.

This seems like such a pain to make but one I put it in “recipe form” it will be so simple.

Feel free to change anything you want just like I did. You are NOT making it for ME…. you are making it for YOUR family.
