Pad Thai served with egg rolls

 

I love fast dinners, and this is one of them

 

I normally make my own sauce but I needed something really fast for two batches of “eaters”.

 

Okay this batch is on the platter and ready to go for those home from work ( or play).

 

 

 

 

 

The cilantro is mainly on one end for those that hate it. I tried to keep the shrimp away from one spot for the one person that isn’t crazy about it. It allows them to take from the other end of the platter.

When I make this, I make sure that all of the ingredients are ready because it goes sooooo fast.

 

 

Okay, lets start this dinner.

 

The pasta is ready. Don’t  laugh, I had to use regular spaghetti noodles because I didn’t have any rice noodles in the pantry. That’s OK, my family doesn’t care. We don’t take things too seriously. We don’t sweat the “small stuff”

 

 

The eggs were scrambled and set aside. Now its time for the shrimp

 

 

(thinking to myself…. “hey, where are the pictures of the egg rolls?” Aww crud, did I take any?) ………….  I’ll be right back.

 

Aw Crud, I can’t find them and I’m not sure I took any. Life huh?  Ok, close your eyes and picture an egg roll on a plate. Did you see it? Good.

 

This is the left over bowl. It will feed someone later, or tomorrow for lunch.
