ONE of my favorite quick salads Sweet and Sour Cucumber Salad

This is one of my favorite “any time” salad. It can be thrown together so fast and for any entree. You can also double or triple or even cut the recipe in half. Ice cold and crispy….. Yum !

 

Sweet and Sour Cucumber Salad

 

3  large cucumbers

1  onion ( your favorite salad onions. White, Yellow, Red/Purple…it is up to you)

1  red Thai chile

 

For the dressing

 

1/4  cup white vinegar

2  teaspoons sugar

1/2  teaspoon garlic powder

1/4  cup oil

pinch of salt

 

  1. Wash, peel and thinly slice cucumbers.
  2. Peel and slice the onion thinly.
  3. While using gloves, deseed the chile and slice into very fine slices. WASH HANDS NOW if you did not use gloves.
  4. In a shallow bowl, place the cucumber slices, sliced onions and the sliced chilies and set aside.
  5. Mix all the dressing ingredients together and pour over the onions and cucumbers.
  6. Refrigerate the salad for a few hours.
  7. Serve chilled

Makes:    4 servings
