I’d call this a ” freezer fill up day”. Muffins, breakfast casseroles, cooked bacon, sausage patties, omelette fillings etc. I like the idea of having assorted breakfast foods for anyone to microwave for a descent breakfast like french toast, pancakes, omelettes etc.
I make banana muffins every single month. I buy a lot of bananas and when start turning brown I throw them in a Ziploc freezer bag and label them. Then throw them in the freezer and wait until I have a large amount to make muffins or bread.
Here is one stack of cooling racks ready for me to start the muffins. There is another larger stack next to this one. I already made a couple breakfast casseroles and they need to come out of the oven before I make the muffins.

I think that I quadrupled the recipe this time because of so many frozen bananas.

I used this pack of muffin papers and the rest of the brown ones that I had.

These are chopped nuts photographed with the wrong camera setting because someone borrowed it “for a minute” and didn’t change it back. ( I don’t sweat the small stuff).

Easy access to grab on the way out the door, throw into lunches, throw in your purse or to eat with your morning coffee.
