Breakfast Egg Muffins

 

I have been doing this WAY BEFORE they became popular. I would say about 40 years or even more.

Cooking the ham green pepper onion spice. I later added more ham so I had to add more other ingredients too. LOL

I have the whole big set….. LOVE IT and will never be without one.

This time I used 22 or 24 eggs. Each serving is 2 muffins.

Put in the freezer for a fast breakfast with a  couple slices of Whole wheat toast.

Ok all scrambled and ready to add the ham, green pepper, onion, spices

I added more green pepper after the batch was cooked and cooled because it didn’t look like enough. Yes, that’s how I cook. I was taught to cook about 4 years old making scrambled eggs and toast standing on a chair next to Mom.

Ok time to bag them up in bags of TWO then put them in a Ziplock bag for the freezer.

Grab one out throw it in the microwave and make toast. Yum.
