I like when I make up a recipe and turns out “edible”. Apple Stuffed Pork Roast with Apple topping. Served with Mashed potatoes and green beans. Yummy

Start with a boneless pork loin or a pork chop

Now flatten it out with a hammer or a soup can or your husband sledge hammer. Let’s not use last one.

Now pound it out but if you are using pork chops on the bone, please avoid pounding the bone. ( smile )

When you’re done pile them up on a plate or platter.

Now go back out to the freezer or into the pantry and grab some stuffing. Most of the time I have homemade stuffing out there. I make it in a large roaster pan and when its done I cut it into squares, wrap in foil, use a foodsaver and freeze it. Makes for a nice easy side dish to warm up with dinner.

We’re getting a lot of exercise running here or there grabbing things ……

Now run back to the pantry or the basement or where you store your canning jars filled with your hard work.

Grab a jar of apple pie filling or just apples.

Pour it out on a plate so you can pick and choose the right size pieces etc.

Take a piece of the pork and lay it out on the cutting board or plate. take a large spoonful of stuffing and make a pretty pile like the photo. Ok maybe not so pretty.

Now place apple pieces on top. (don’t forget you have to wrap these so keep that in mind when you are telling yourself how much you love apples and the pile is getting bigger. Take some off now before it is too late LOL)

DON”T get rid of the juice or liquid from the apples… you will need it.

Now wrap them all up and place in a casserole dish or 9×13 or Pyrex etc etc.

Pop them in the oven at 350 degrees. I really don’t know how long to tell you to cook them. Probably until the juice at the bottom is clear and they are nice and browned.

Don’t panic when you see this pan, it is not burnt. It looks a lot worse than it really is. It wipes right off, I love these casserole pan.

While those are cooking put more of the apple stuff in a small pan on the stove. Let it simmer until it starts to break down into “smoother” apples NOT big chunks. You will use this as a topping when serving. See…. look at this photo.

Hurry and plate it up

Now put extra hot apple filling from the pan on top. Make sure you have enough for at least every bite or every other bite. Yummy.

Now hurry and smash some taters and run out to the stand up freezer and find those green beans that were cooked with bacon. Yum… You know the ones, the 50 small bags in the freezer drawer LOL Have I mentioned how much I love my freezers and foodsavers?
