Mmmm…..Sketti with Garlic Bread and Salad

Yes, I washed my hands since meeting the “puppy”.

 

Garlic Bread on the side along with a salad…. Yummy !

 

Ok… Pass the Cheese Please !!!

 

Let us start with about 2 pounds of ground beef that has been “defrosted”… Oops…I knew I forgot something.  I was so busy with the puppy that I forgot.

I buy all meat in large packages and divide it up into smaller bags and freeze. I also make up burger patties and freeze those also. I comes in handy when extra guests drop by. You can defrost ( don’t laugh) and throw them on the grill for a fast meal.

That’s OK, it will be fine, this isn’t the first time I’ve forgotten to take something out of the freezer. Admit it, you’ve done that too haven’t you? *wink*

It will start to brown  and you will need to scrape it and roll it IF STILL FROZEN. But I know that you will remember to take it out.

Scrape and turn, scrape and turn. Make sure it is hot enough to brown the beef instead of “steaming” it.

Good grief, this is NOT what I had planned.

 

Brown and scrape, scrape and turn, scrape, scrape. * smile *

Ok, just a small piece left that is still frozen. I’ll just add the  2 med onions anyway.

Let’s add about 2 large cloves of garlic or 4-5  small ones like mine. I was given about 12 heads of garlic so I don’t have to worry about vampires for a few weeks. *smile*

Chop or mince and throw it in.

Stir it up real fast so it doesn’t burn.  The liquid is coming so it will save the garlic.

This is all stir up and the smell of garlic smells wonderful.

Add about one large green pepper chopped

The tomato paste is next. This is one of the tiny cans of paste. I normally double or triple my recipe but today I didn’t.

I find that Hunts has suck a deep tomato flavor. I usually only buy it for Sketti Sauce.

To my shock and horror… I went to the pantry for the canned Tomato Sauce….. I was OUT !! Can this day get any better?

Ok, don’t panic, see what else is on the shelf. Puree, diced, whole, and more paste. No problem… I’ll make my own sauce.

smoosh with a potato masher and add….. So far so good.

It is time to add green peppers. Add half then see if you need more.

I needed to add more, I added the rest.

 

I added about 2 tsp of Italian seasoning, 2 tsp of garlic powder ( yes, more garlic). You can omit this if your garlic is fresh and smells very strong. We like extra garlic. Then about 2 tsp of black pepper, 1 large pinch of red pepper flakes. Now stir……..

Run to your herb garden and cut some Rosemary. Wash, spin dry and chop. I only used about 1 Tablespoon.

 

Stir it all up, cover and let cook for at least 2 hours. Simmer only, do not boil or it will burn.

 

It looks like it is time for me to start the garlic bread and the pasta.

It won’t be long now…………

 

The pasta is now boiling………..

Bread is seasoned and baked. Now to slice it and serve dinner.

 

I had a special request to make a chicken patty to make “fake” chicken parm. No problem…..

Now sprinkle with parm and Romano cheese and dig in.

The salad and the bread are on the table, help yourself.

I learned to cook without recipes, but I will try to place ALL food into recipe form.
