Please be careful when cutting these in half.
What I do is make small stabs so I have a dotted line. Then I take a knife and saw back and forth until it goes threw. DO NOT try to cut all at once.
That is how you will get cut from the knife slipping. Please be careful
Now scrape out the seeds into a colander and set aside.
now smear olive oil, salt and pepper all over the inside of the “sqishes”.
Place face down on a sheet pan covered with foil
place in the oven for about 40 mins or an hour depending how stubborn your squash is that day.
All done….
Now scrape out the insides and place either in a bowl or pan. If you are serving with sauce or serving it right away the bowl is what you need.
I put mine into a pan with butter and more salt and pepper to keep warm for a while until dinner is done.

Clean them just like you do with pumpkin seeds and roast them in the oven .
