*smacks head….. save work, save work, save work. * Here I go again and it took forever. Ok now forever but…. ( sniff, sniff)
This meal isn’t as boring as it looks, actually it has very good flavor . Served with a cold pickled beet salad, a sweet potato and a tossed sald.
Most of the time I throw things together with a recipe. This is one of those meals. I will type up a recipe at the end of this post but until then….this is what I did.
Prehead oven to 350 degrees F
4 large pieces of fish (Cod, Pollack, Talapia etc)
In a bowl I combined 1 cup grated cheese ( I used Ramano from one of those shaker bottles. *gasp* but I do add fresh at times too. This was a day i threw it together. Now add about2 tsp of lemon zest, salt and pepper, about 1 tsp Old Bay seasoning.
In another bowl I whip up 1 or 2eggs with a few shakes of Tabasco.
Are you shaking your head at me? Don’t think I can’t see you…
Lemon zest, Old Bay, Shaker Cheese, salt and pepper etc
All of that in a bow.
This parsley is from one of my aerogardens. I love fresh herbs.
Now add this amount of parsley ( you’re doing it again aren’t you?)
Hey look… here comes the shakes of Tabasco
Now take your fish and make it swim in the egg mixture.swishing it back and forth a couple times. Now take it out and place it on the dry mixture and press lightly. Now flip it and coat the other side.
Place in a baking pan sprayed with Pam or any cooking spray. Sprinkle with a little extra breading and chopped parsley and bake . This is what it looked like after I sprinkled with the left over cheese breading andparsley. yes it looks sloppy but it will look totaly diferent when it is cooked.
See…. it doesn’t look “THAT” bad does it? Wouldn’t you eat it if it was the last meal left on earth? It was yummy.
